Some dishes are good. Some are memorable. And then there are the few that become part of a state’s identity. The Original Chopped Salad is one of those dishes – so embedded in Arizona’s culinary culture that it has its own day. That doesn’t happen by accident.

Over the years, the chopped salad has become a Valley staple –  visually striking, thoughtfully constructed, and built to deliver balance in every bite. The traditional version features smoked salmon, arugula, Israeli couscous, dried sweet corn, pepitas, currants, and Asiago cheese, finished with a buttermilk pesto dressing. Clean. Colorful. Precise.

At We-Ko-Pa Golf Club, we’ve taken that Arizona classic and given it a distinctly Southwestern interpretation.

We-Ko-Pa’s Chicken Chopped Salad starts with fresh arugula and layers in chile-lime chicken, diced tomatoes, pepitas, roasted poblano quinoa, roasted corn, and red peppers. It’s finished with a vibrant cilantro-pesto dressing that adds brightness and depth without overpowering the ingredients.

“The chopped salad is an iconic dish in Arizona and for good reason,” said Dan Partridge, We-Ko-Pa Golf Club Food and Beverage Director. “It’s near perfect visually, with vibrant colors and each ingredient perfectly aligned in rows. We focused on incorporating traditional Southwestern flavors and ingredients into our version. When everything comes together, the salad becomes an incredible combination of textures and flavors.”

And that presentation matters.

Before it’s mixed, the ingredients sit in clean, intentional rows, with each component placed in a distinct, almost architectural manner. It’s a dish that respects its structure, but once combined, the character shifts into something more. The smoky heat of the chile-lime chicken meets the natural sweetness of roasted corn and red peppers. The quinoa adds depth and substance. The pepitas bring crunch. The arugula provides just enough bite to keep it balanced.

Every forkful delivers contrast and cohesion at the same time.

It’s a salad that feels rooted in Arizona while reflecting the flavors of the Sonoran Desert that surround We-Ko-Pa. Familiar in concept. Local in execution. Elevated in experience.
