We-Ko-Pa Golf Club has come out of overseeding and fresh ryegrass on the fairways means new menu items at We-Ko-Pa Grille as our restaurant opts for in-season fare this winter. Sure, the crowd favorites like mouthwatering burgers, killer sandwiches and delectable and sharable appetizers will always be available at We-Ko-Pa, but throughout the cold desert nights, the menu at the We-Ko-Pa Grille changes just a bit to offer a few seasonal items to warm up our guests. This month’s feature is a staple of Southwestern cuisine: Carne Asada Tacos – the perfect spice to knock Jack Frost off his rocker.

For those of you who haven’t spent all your time in the Sonoran Desert developing a taste for traditional Mexican food, carne asada is a dish of grilled and sliced beef, usually skirt or sirloin steak marinaded with Mexican spices, seared and then charred to add additional flavor. We-Ko-Pa kicks the already explosive carne asada taste up a notch by adding diced red onion, cilantro and cotija cheese – a unique, firm, white cheese to carefully complement the dish with a mild tang. We-Ko-Pa’s carne asada tacos are always served with fresh-made, house tortilla chips with just the right amount of salt and house-made salsa, perfect for dipping and adding just a little extra “kick” that goes a long way.
